Chipotle Mac ‘n’ Cheese
- 250g macaroni
- 600ml semi-skimmed milk
- 47g butter unsalted
- 26g plain flour
- 100g mozzarella
- 150g mature cheddar
- 4 tablespoons Chipotle Chilli Sauce
- 1 tablespoon English Mustard
- 40g panko breadcrumbs
- Pinch of sea salt to taste
- Few snips of Chives
Preheat oven to Gas Mark 6/ 200°C/400°F
Place macaroni in a saucepan of salted boiling water, cook for about 10 minutes. Once cooked drain and set aside.
Melt the butter in another saucepan, stir in the flour and cook for 1 minute.
Gradually stir in the milk and bring to the boil until the sauce thickens, while continually stirring.
Add the cheddar cheese, Chipotle Chilli Sauce, mustard, the drained macaroni and salt to taste. Stir to combine.
Transfer into a heatproof dish, top with mozzarella then place in the oven to bake for 25 minutes. Serve with a sprinkle of chives
